Food Scraps Back to the Fields

Los Angeles: In a move that could potentially keep 5 million tons of annual waste out of California landfills, a trend has emerged wherein restaurants collect food waste for use as compost in Central Valley farms.

The food scraps in question are inedible organic material unsuitable for food banks that are collected from LA restaurants. In San Francisco, an even more successful program has been under way for a few years that goes even further - collecting household organic waste as well.

Additionall, the return of organic material to the Central Valley is somewhat ironic, as it has servered as the selfless bread basket and water source to urban California for many years.
